Pass out 3X5 cards and have the students prepare quizzes on the SM they own (owning means they have chosen scripture masteries ahead of time to lead the class in learning ~Jenny).
Make copies and save until the week you are concentrating on that scripture.
Quiz ideas: Fill-in-the-blank, first letter only, unscramble (each line on the card will need to be put into the correct order).
